Chicken Marinade Recipe - Figure Ate Foods

Chicken Marinade Recipe

We love this chicken marinade recipe because it adds a whole new adventurous flavor to an old favorite — and it’s incredibly simple to make. This recipe was inspired by one of our customers, Bobbie, who discovered that our Persimmon Vinegar is the secret to a marinade that’s tangy, savory, and just a little bit sweet. Thanks for sharing it, Bobbie!

Why Persimmon Vinegar Works So Well in a Chicken Marinade

Vinegar is a classic marinade base because its acidity helps tenderize the meat and carry flavor deep into the protein. But unlike harsh white vinegar or overpowering apple cider vinegar, our naturally fermented Persimmon Vinegar brings a mellow, fruit-forward tang that complements chicken beautifully — especially when paired with garlic, white wine, and a touch of maple syrup.

Chicken Marinade Recipe

Yield: Serves 2–4

Ingredients

  • 1–2 lbs of chicken
  • 1–2 tbsp olive oil
  • ¼ cup Persimmon Vinegar
  • A splash of white wine
  • 3–4 chopped garlic cloves
  • Salt, pepper, and spices of your choice to taste
  • Optional: 1–2 tbsp of maple syrup

Instructions

  1. Mix olive oil, Persimmon Vinegar, white wine, garlic, salt, pepper, and spices together.
  2. Poke holes in the chicken with a fork. Pour the mixture over the chicken and allow it to marinade for 30 minutes or longer in the fridge.
  3. Grill or bake to your preference.

Tips for the Best Results

  • Marinate longer for more flavor: 30 minutes is the minimum, but overnight in the fridge will give you the deepest, most developed flavor.

  • Poke those holes: Don’t skip this step — it helps the marinade penetrate the meat rather than just coating the surface.

  • Grill for char, bake for juiciness: Both methods work great. Grill over high heat for a caramelized crust, or bake at 400°F for 25–30 minutes for a juicier result.

  • Use the leftover marinade as a sauce: Bring it to a boil in a small saucepan for 2–3 minutes and drizzle over the finished chicken.

What to Serve with Persimmon Vinegar Chicken

This marinade pairs beautifully with roasted vegetables, grain bowls, or a simple green salad. The tangy, garlicky flavor also works great sliced over rice or tucked into a wrap with pickled onions and fresh herbs.
