Why Persimmon Vinegar Works So Well in a Chicken Marinade
Vinegar is a classic marinade base because its acidity helps tenderize the meat and carry flavor deep into the protein. But unlike harsh white vinegar or overpowering apple cider vinegar, our naturally fermented Persimmon Vinegar brings a mellow, fruit-forward tang that complements chicken beautifully — especially when paired with garlic, white wine, and a touch of maple syrup.
Chicken Marinade Recipe
Ingredients
- 1–2 lbs of chicken
- 1–2 tbsp olive oil
- ¼ cup Persimmon Vinegar
- A splash of white wine
- 3–4 chopped garlic cloves
- Salt, pepper, and spices of your choice to taste
- Optional: 1–2 tbsp of maple syrup
Instructions
- Mix olive oil, Persimmon Vinegar, white wine, garlic, salt, pepper, and spices together.
- Poke holes in the chicken with a fork. Pour the mixture over the chicken and allow it to marinade for 30 minutes or longer in the fridge.
- Grill or bake to your preference.
Tips for the Best Results

Marinate longer for more flavor: 30 minutes is the minimum, but overnight in the fridge will give you the deepest, most developed flavor.

Poke those holes: Don’t skip this step — it helps the marinade penetrate the meat rather than just coating the surface.
