THE ART OF REGENERATIVE WINEMAKING
From Vineyard to Cellar
By following the cues of nature, we’re crafting wines that are more complex, vibrant, and expressive—while restoring the land for generations to come.

At Jalama Canyon Ranch, we embrace regenerative viticulture through:
Grazing with Goats and Sheep – Goats and sheep prep the vineyard before spring hits—breaking up the soil to allow rainwater to absorb and spreading nutrients as they feed.
Planting a Mix of Cover Crops – We plant clover, rye, and other plants between vine rows to protect the soil and provide shelter for helpful insects, boosting biodiversity.
Growing Hedgerows for Habitat – Hedgerow plants are cultivated around the vineyard to bring in pollinators, bees, and insects—balancing the whole ecosystem.
Feeding the Soil with Compost and Fish Emulsion – To nourish the soil, we apply locally-made compost and natural fish emulsion fertilizer to provide essential nutrients for the vines.
Welcoming Natural Helpers – No chemical sprays here, we encourage life at every corner. We build bird perches and nest boxes, inviting owls and hawks to control bigger pests, and encourage tiny insects to protect the soil.
In the cellar, Sandhi Wines employs a meticulous approach to winemaking:
Whole Bunch Fermentation – Chardonnay grapes are placed into fermentation first, with Pinot Noir layered on top.
Gentle Extraction - A combination of pumpovers, treading, and one punch down to enhance structure without overpowering the fruit.
Aged in Neutral French Oak – Allowing purity of terroir to shine.
A Reflection of Each Vineyard – Sandhi uses a consistent winemaking process that lets each site’s character shine.
