Nectarine & Prosciutto Salad with Persimmon Vinaigrette

If you're looking for a tasty salad to make at home, look no further. This recipe is created by one of our friends, @cookinbrooke, who found the perfect balance of sweet and savory with our vinegar, sweet nectarines, and tasty prosciutto for this healthy salad recipe.

Her secret tip? If you have time, toasting the walnuts with olive oil and salt ahead of time. Thanks for sharing it, Brooke!  

 

Ingredients:

  • 1/2 cup Persimmon Vinegar 

  • 1/2 shallot finely diced

  • 1 tablespoon raw honey

  • 1 teaspoon dijon mustard

  • 1/2 teaspoon dried tarragon

  • 1/4 cup olive oil

  • Salt + pepper to taste

  • Arugula

  • Nectarine

  • 1 package organic prosciutto

  • Thinly sliced red onions

  • Walnuts 

  • Chiffonade basil

  • Shaved parmesan

Directions: 

1. To make the dressing, add the diced shallot, persimmon vinegar and dried tarragon to a small bowl. Let sit for 10-20 minutes.
2. To finish the dressing, add in honey, dijon, salt, pepper and start to whisk, slowly drizzle in olive oil while whisking continuously.
3. Meanwhile, cut nectarine into even slices. Thinly slice basil, and onion. Use a carrot peeler to get nice strands of parmesan.
4. Add arugula to a bowl, place nectarine on top, add red onion, basil, prosciutto, parmesan, walnuts, and dressing!
