Bright Beet Slaw with Persimmon Vinaigrette

When Chef Jonny Gossett’s mom gifted him a bottle of Figure Ate Persimmon Vinegar over the holidays, she knew it wouldn’t sit long on the shelf. A graduate of the French Culinary Institute in New York and now the Executive Chef at The Thoroughbred Club of America in Lexington, Kentucky, Jonny has built his career around local, seasonal ingredients and the kind of cooking that honors where food comes from.

He’s led kitchens at celebrated spots like Dudley’s on Short, Idle Hour, and The Apiary, and his love for fresh, farm-grown produce runs deep — he even grew the beets for this dish himself.

Persimmon vinegar was the inspiration for a bright beet slaw layered with citrus, spice, and a tangy vinaigrette that brings it all together.

Beet Slaw with Persimmon Vinaigrette

Ingredients

Salad:

  • 2 large beets, grated

  • 1 fresh orange, segmented

  • Sliced almonds, toasted

Vinaigrette:

  • ½ tsp grated fresh ginger

  • ½ tsp grated fresh turmeric

  • Grated zest of one orange

  • 1 Tbsp honey

  • ¼ cup olive oil

  • 2 Tbsp Figure Ate Persimmon Vinegar

  • 2 Tbsp fresh orange juice

Directions

  1. Combine grated beets and orange segments in a large bowl.

  2. Whisk together all vinaigrette ingredients until smooth and emulsified.

  3. Pour the vinaigrette over the salad, toss to coat evenly, and top with toasted almonds.

  4. Optional: add fresh persimmons for extra sweetness and color.
