Figure Ate Launches Beef Biltong Sourced From Verified Regenerative Grasslands

The team at Figure Ate believes the way we eat and drink has the power to change our world for the better and that we owe it to ourselves and future generations to unlock the restorative power of food.

Pasture and farmland used to raise and feed livestock accounts for 38% of the earth's habitable land, the most widespread land use worldwide (UN Food and Agriculture Organization). For each kilogram (kg) of conventionally raised beef, 33 kgs of greenhouse gas emissions (Kg CO2eq) are emitted into the atmosphere (Quantis). But it doesn't have to be this way. Figure Ate set out to develop a snack made exclusively from Grass Fed & Grass Finished beef that is Certified Humane, pasture raised, and verified to restore grasslands and sequester carbon

Figure Ate is proud to share their success in this bold effort: an undeniably delicious, tender, protein-rich staple for your body that also contributes to ecological restoration and climate balance.

Introducing Figure Ate Beef Biltong. Never heard of Biltong before? Think of it as a more tender, wholesome, and flavor-rich alternative to jerky. The traditional recipe consists of beef marinated in a blend of vinegar and seasonings, then air-dried without heat, sugar, or artificial preservatives. The result is a convenient grab n’ go snack with 32 grams of protein, zero grams of sugar and zero grams of other “stuff” you don’t want in your body.

You will never settle for beef jerky again.

Figure Ate produces its Biltong in small batches to maximize freshness and flavor quality and has released 2 flavors: Original and Spiced. The Original recipe remains true to the South African tradition and features the earthy tones of coriander and black pepper to highlight the richness of this premium beef. The Spiced recipe builds on the Original with just a hint of heat from garlic and red pepper, leaving your tastebuds craving more.

The beef used to make this Biltong is impeccably sourced, meeting three critical standards: Land to Market Verified, Certified Humane, and American Grassfed Association Certified. Partner ranchers graze their cattle exclusively on pasture through their entire lives in a way that reflects wild herd behavior; this style of ranching pulls carbon from the atmosphere and stores it in the soil, reducing greenhouse gases and helping rebuild topsoil. To achieve and sustain Land to Market verification, ranching partners complete EOV™ (Ecological Outcome Verification) monitoring every year. EOV™ is a data-based soil and landscape assessment methodology developed in collaboration with leading scientists and researchers worldwide that tracks outcomes in soil health, biodiversity, and ecosystem function. When you see the Land to Market seal, it provides true transparency back to regenerating land.

White Oak Pastures, a sixth-generation family farm in Bluffton, Georgia, is a featured Land to Market supplier for Figure Ate Biltong. White Oak's cattle forage exclusively on grass, pasture, or hay — the natural diet of ruminant animals. They are free to roam, graze and live their entire life on the pasture, and are processed on the farm. They’re never given any antibiotics or hormones because they gain weight at a natural rate, ultimately staying healthy and strong through their entire lives. Even more remarkable is a multi year life cycle analysis of White Oak's beef production that revealed each kg of beef produced sequestered 3.5 kgs of CO2eq from the atmosphere (Quantis), demonstrating regenerative agriculture at work and a carbon negative beef source.

Figure Ate was born out of the White Buffalo Land Trust, a 501(c)(3) non-profit dedicated to regenerative agriculture. White Buffalo Land Trust demonstrates, researches, and teaches regenerative land management principles and practices for local, regional, and global impact. When you purchase this Biltong you are nourishing yourself and your family, directly improving land health, and all the proceeds return to White Buffalo Land Trust to support the expansion of regenerative agriculture.

Figure Ate Beef Biltong will be available in February 2022 at various California retailers, online marketplaces, and always at www.FigureAteFoods.com.
