A Simple Grilled Peach + Burrata Salad Recipe

This grilled peach and burrata salad is what happens when easy meets elegant. You’ve got juicy summer peaches that are lightly charred, paired with a savory, creamy burrata, and finished with a bright, herb-loaded vinaigrette made with our persimmon vinegar.

What Is Burrata?
Burrata is basically a cheese within a cheese: a pouch of mozzarella filled with stracciatella (shreds of mozzarella) and cream. The result is rich, velvety, and unexpectedly refreshing—especially when served with something acidic or sweet.
The silky mozzarella shell and creamy interior are a perfect match for grilled peaches and a tangy-sweet persimmon vinegar vinaigrette. Great for warm evenings, dinner parties, or just because!
Ingredients for Grilled Peaches and Burrata Salad

4 ripe peaches, halved and pitted

2 tbsp olive oil

1 tbsp Figure Ate persimmon vinegar

2 garlic cloves, minced

3 tbsp finely chopped pistachios

2 tbsp each chopped fresh mint or basil

2 tbsp chopped cilantro

Kosher salt and black pepper

6-8 oz burrata cheese
How to Make Grilled Peaches + Burrata

Make the vinaigrette: In a small bowl, whisk olive oil, persimmon vinegar, garlic, pistachios, mint, cilantro, salt & pepper. Set aside.

Prep the peaches: Brush the peach halves with olive oil and season with salt.

Grill: Place peaches cut-side down on a preheated grill over high heat. Grill for 3–4 minutes, rotating once, until lightly charred.

Assemble the salad: Pull apart burrata and place over grilled peaches. Drizzle generously with vinaigrette.
